Ginger is an herb in the family of the Zingiberaceae, with underground stems which are tough and swollen. Native to tropical and subtropical Asia, ginger originated in China and is today produced in Jamaica and Brazil, too. The ginger is dried under the sun or in the microwave oven for better shelf life. The ginger receives its characteristic odor and flavour from gingerol, zingerone and shogaol. Dried ginger has a higher percentage of shogaol than general.
